Scottish Caboc cream cheese

Caboc is a Scottish cream cheese, made with double cream or cream-enriched milk. This rennet-free cheese is formed into a log shape and rolled in toasted pinhead oatmeal, to be served with oatcakes or dry toast. The texture is smooth, slightly thicker and grainier than clotted cream, while the colour is a pale primrose yellow. The fat content is typically 67-69%, which is comparable with rich continental cream cheeses such as mascarpone. Historically, it was a cheese for the wealthy, unlike the similarly-aged Crowdie, which is made from the by-products of skimming cream from milk and thus is considered a poor man's cheese.
Caboc is Scotland's oldest cheese, dating from the 15th century in the Scottish Highlands. The cheese was first made by Mariota de Ile, the daughter of the chieftain of the Clan MacDonald of the Isles. At 12 years old, Mariota was in danger of being abducted by the Clan Campbell, who planned to marry her to one of their own and seize her lands. Mariota escaped to Ireland, where she learned how to make cheese. On her return, she passed the recipe to her daughter, who in turn passed it onto her daughter. The recipe is still a secret and has been handed down from mother to daughter ever since. The present maker is Mrs Suzannah Stone of Tain, who works with a team of eight local women and her cheese is sold under the seal of Highland Fine Cheeses Ltd.
According to legend, the tradition of coating Caboc in oatmeal started as an accident. A cattle herder stored the day's cheese in a box which he had used to carry his oatcakes earlier that day. Apparently, the oatmeal-coated cheese was enjoyed so much that from that day, Caboc has been made with an oaten coating.

Our bread is made fresh daily from a 60 year old recipe, without preservatives or improvers, by Mark, Dave
and Callam.
By using a long fermentation we make a bread which is full of flavour, just like bread used to be! This is not a quick process, it will take nearly three days to make a loaf, two days for the fermentation to develop the flavour and then on the third day it is made into bread.
If you cannot make it to us every week then why not keep an eye on the special items we have available in our bakery a different times of the year!

Our Hot counter is always stocked up during lunch with a range of our homemade pies, pasties and other hot treats! At weekend we offer a selction of others goods such as ham shanks and chickens..

With over 80 years experience resting behind the counter the Butchers at Huntley’s is a meat eaters dream.
As licensed game dealers, customers come from far and wide knowing that they are assured of top quality cuts and a personable, knowledgeable service. The butchers are also happy to give advice on recipes and preservation techniques.
A full range of meat is sourced at Huntley’s Farm or locally. There is traditionally reared poultry, home fed Beef and Ribble Valley lambs, plus bacon and hand-linked sausages all available for your daily needs.
Master Butchermen Tony Davison and Ken Westall pride themselves on correctly prepared produce with no hidden joints, giving you the very finest and tastiest cuts.

Our individual deli counters serve meats and charcuterie of the finest quality ranging from smoked ham to turkey that is cooked in our kitchens. We also stock a range of salami's and an impressive selection of olives and marintaed specialities to compliment them.
Our cheese counter now holds an incredible range of over 80 different cheese's. These range from locally produced Forest of Bowland Cheese's to more specialist cheese's that are not available in supermarkets such as Dorset Blue and Stinking Bishop! If you have any special requests please ask as we are able to source lots of different cheese's and we always like to try something new!
The Food Hall also boasts an extensive array of cooking essentials, such as pickles, oils, herbs and spices… and of course our shop would not be complete without our famous selection of over 80 flavours of Moo2You ice cream

The Fruit and Vegetable shop at Huntley’s opened in 2002 and has become a way of life for many of our customers.
For your essential five a day you can buy our locally sourced produce at competitive prices! Every week we have different offers on seasonal goods. Also during the summer months we grow some of our own produce ranging from broad beans to strawberries! Please feel free to ask our staff about whats in season.....

We stock a wide range of fine jams and preserves. These range from Lisa Reedys award winning Beetroot Chutney, Dart Valley's Traffic Jam and York Preserves luxury extra fruit jams.....amongst many more!
We also use many of our preserves & chutneys in our restaurant, so why not have lunch with us and sample them before you buy!
